Distillation Process
Eighteenth Century Royal Navy officers suspected that some distillers in Great Britain were diluting their gin to an unacceptable low proof. They tested the proof by pouring some of their gunpowder on it to see if it would still ignite, making it “Navy Strength”. We wanted to have a little fun exploring this style and decided to try our Fieldnotes Gin recipe at a higher proof.
Our Handcrafted Gin
This is our promise to be caretakers of this beautiful land. All of our spirits are made from organic ingredients and sourced from local and regional family farmers as much as possible. We work with farmers who are growing open-pollinated crops which support pollinator habitat and healthy soil as well as a healthy environment for us all. These heirloom and open-pollinated crops also produce deeper and richer flavor profiles. You will taste the difference.

Serve With
Despite the same recipe as our Fieldnotes Gin, the flavor profile is quite different. At 114 proof and unfiltered, this gin showcases a much more prevalent juniper character. The floral notes are more subtle with a stronger herbaceous profile coming through, highlighting many of the cooking spices that we use. The results are soft but with depth and complexity creating a truly unique gin. Serve in a standard gimlet, martini or mixed with tonic.
Made In La Crosse
We are sourcing most of our ingredients for our spirits right here in our own backyard from local farmers. Our distiller is taking those locally sourced ingredients and distilling them at our facility in downtown La Crosse. Every step of the process is handcrafted and made in house.
