Distillation Process
Over the river and through the bluffs to Hoch’s Organic Orchard we go. Farm-pressed cider and double-distilled in bourbon barrels aged slow. Hoch Orchard and Gardens in La Crescent, MN, an organic family farm set high above the Driftless Region’s bluff country of the Mississippi River Valley, pressed several varietals of apples from their 2018 harvest, fermented the juice on the farm and delivered an exemplary cider that we double-distilled and aged in used whiskey barrels.
Our Handcrafted Spirits
This is our promise to be caretakers of this beautiful land. All of our spirits are made from organic ingredients and sourced from local and regional family farmers as much as possible. We work with farmers who are growing open-pollinated crops which support pollinator habitat and healthy soil as well as a healthy environment for us all. These heirloom and open-pollinated crops also produce deeper and richer flavor profiles. You will taste the difference.
Serve With
This two year aged apple Brandy is very approachable with the apple standing out front on the nose. When the Brandy hits the palate the apple notes up front quickly transition to a tart apple followed by hints of vanilla, oak and subtle spice. The heat is masked with a slight sweetness of caramel and finishing with light toast. Enjoyed neat, on the rocks or in your favorite brandy inspired cocktail, this Brandy will have you pulling the cork and wanting to dive in and bobbing for another apple.
Made In La Crosse
We are sourcing most of our ingredients for our spirits right here in our own backyard from local farmers. Our distiller is taking those locally sourced ingredients and distilling them at our facility in downtown La Crosse. Every step of the process is handcrafted and made in house.
